Detection methods of sugar content in several common fruits
Fruits have become our daily necessities. Eating fruits often is good for health. Colorful fruits always make us linger and never get tired of it. But the sugar in fruit is also known to us. The question is, how much sugar is in the fruit, which is what we are more concerned about and concerned about. Is there any way we can check the sugar content in them?
First of all, we need to analyze the composition of the fruit. As the name suggests, most of the fruit, even 99% of it, should be water, so the solids in it can be ignored. In the calculation process, the fruit should be treated as sugar water. And because the sugar in the fruit mostly exists in the form of glucose fructose, the sugar content can be equal to the soluble solids, after all, the content of vitamins and minerals is very small.
I went to the local supermarket and bought four kinds of fruits: apples, oranges, pears and grapes. It is a representative sugary fruit commonly found in the north. The sugar content was detected by using the existing instrument ATAGO table sugar meter in our laboratory.
Extraction of juice
Extraction with a juicer is the most convenient. I cut a piece of fruit from the fruit with a knife, pressed the juice with a garlic press, dripped the juice into a small beaker, and then used a Pasteur pipette to absorb the juice supernatant for testing. The instrument used is an Atago-5000a Abbe refractometer, which should be zeroed and calibrated with clean water and the standard solution provided by atago before testing.
Detection process
Drop the supernatant juice on the detector window of the Atago-5000a Abbe refractometer, then cover the detector, the instrument has automatic temperature control function, when the temperature reaches 20 degrees Celsius, press start to read, The number read can be approximated as the sugar content of the fruit. The test results are as follows:
Four kinds of fruit sugar content scale
Fruit sugar content
Apple 8.25%
Oranges 14.06%
Pears 10.39%
Grape 19.63%
Experimental results
As can be seen from the above table, the sugar content in apples is lower, and the sugar content in grapes is the highest, which is also in line with our perception of fruits. Therefore, diabetic patients should try to eat less juicy fruit. Apples and pears are relatively healthy fruits with low sugar content and are suitable for ordinary people to eat. In fact, there are many instrumental analysis in life. As long as we are people who are interested in life, the laboratory can be used for us.
